This Vegan Triple Chocolate Cookie Cake is the ultimate Independence Day treat, topped with a creamy Pascha Vegan White cream cheese icing and bursting with PASCHA Organic Dark & White Chips. This patriotic dessert is as delicious as it is beautiful.
Perfect for kids & adults alike, this giant cookie cake is a great way to spend time together in the kitchen and celebrate summer with sweet, chocolate-filled memories.
Decorate it with red, white, & blue vegan sprinkles! Don’t forget to personalize it with a piped message in the center. Whether you're hosting a Fourth of July BBQ, picnic, or backyard celebration, this cookie cake makes a show-stopping, crowd-pleasing dessert.
Ingredients
- 1 batch Triple Chocolate Cookie Dough (get our recipe here)
- 1 cup PASCHA Organic Vegan White Baking Chips
- 1/2 cup Salted Vegan Butter, room temperature
- 8 oz Vegan Cream Cheese, room temperature
- 1 tsp Vanilla Extract
- Blue, White and Red Vegan Sprinkles
Directions
- Line a baking tray or pizza pan with parchment paper and pat out dough into your desired size of circle - you may not need all the dough. Be careful to not let the dough be too thick.
- Bake at the temperature called for in recipe directions. Note: you will need to bake for longer than the recipe calls for. About 18-20 mins.
- Set aside to cool while you make the icing.
- Cream together butter, cream cheese, and vanilla.
- Melt white chocolate in a double boiler.
- Beat melted white chocolate into the cream cheese mixture.
- Refrigerate if needed until pipping consistency.
- Once the cookie is fully cool, fit an icing bag with a star tip and fill with the cream cheese icing. Pipe a border around and sprinkle with sprinkles. Enjoy!
Tip: Change the piping bag to a writing tip and write a celebratory message in the center of the cookie. This is a perfect recipe to adapt to other celebrations. Change the color of the sprinkles and icing to suit.
