Vegan Mint Chocolate Chip Ice Cream

Ingredients:

  • 2 medium Avocados
  • 1/3 cup Brown Sugar
  • 1 tsp Mint Extract
  • 1 can Full Fat Coconut Milk
  • 2 tbsp Tahini (or other seed/nut butter)
  • 3/4 cup Pascha Chocolate Chips (We used 85% Cacao)

Directions:

  1. Add avocados, coconut milk, brown sugar, and mint extract to a food processor or blender.
  2. Blend until smooth.
  3. Pour mixture into ice cube trays and freeze until solid.
  4. Place frozen cubes into a blender or food processor and blend again until smooth.
  5. Add in Pascha Chocolate Chips and stir well.
  6. Place in small mason jars and return to the freezer until it reaches the desired consistency. Enjoy!
